Every morning, before the sun even rises above the horizon, the sky over Koh Phangan is still a deep blue. The alarm clock diligently does its job, just like me, who must wake up with energy to begin the important task of the day: preparing delicious food to welcome all our customers, both friendly locals and international tourists who come from all over the world to visit Koh Phangan, Surat Thani Province.
Today, I'm especially focused and determined to create a diverse menu to satisfy everyone's taste buds. There will be authentic Southern Thai dishes, intensely spicy and flavorful according to traditional recipes for those who love a kick, as well as milder, easier-to-eat options that I've adapted to make it accessible and enjoyable for foreign tourists.
But before you see the storefront you know, let me tell you, the behind-the-scenes work requires immense physical and mental effort. Every day, we have to set up the entire stall, from cleaning and arranging items on the cart to setting up tables and chairs for diners. I spend 2-3 hours a day in the kitchen preparing and setting up the stall, cooking and running the system. Then, we carefully move everything to Pantip Market, the culinary hub of this island.
Once my stall was set up, the moment the clock struck ready to sell, I was drenched in sweat and feeling quite exhausted. 😅 But as the saying goes, an army marches on its stomach, and a vendor like me wasn't going to let myself run out of energy. So, I ordered a rich, creamy, and fragrant Thai coffee with milk from a drink stall in Pantip Plaza, to enjoy with a couple of tempting traditional Thai desserts. The bitter-sweet taste of the Thai coffee, combined with the delicate sweetness of the desserts, was the perfect remedy for my fatigue, instantly energizing me to greet customers with my sweet smile.
Today is another day I feel proud of the small things I've done, and I want to share these stories on this blockchain.
Let every word serve as a record of precious memories of my life on Koh Phangan. There have been happy times and tiring times, but it's the lifestyle I've chosen and love.
