There's a particular local noodle dish that has become my preference in the past few months. I guess this is the dish that I can say is my go-to soup dish that I will eat whenever I feel that I'm gonna get ill. It may not have the same effect to everyone else but I find it to be comforting, that's the aspect of it that I like.
It's called as Ban Mian. It has a wide strip of noodles that is a bit curly.
The broth is more towards the clear side and there's no strong flavor and taste to it. It's a dish with subtle flavor which people may think is bland. I think I mentioned it in my previous posts that I'm the type of person that prefers dishes with slightly bland taste and flavor. It's because I feel that the dishes with subtle taste and flavor are the ones with the right amount of seasoning to them.
Among the ingredients in this dish, the one that has the strongest flavor are the dried fishes. I believe these are anchovies. I like these in this dish because the seafood flavor gives this dish a nostalgic feel to it.
The texture of the noodles is something that I enjoy about this dish. It's wide and a bit thick. It feels like satisfying to be chewing on a mouthful of it (haha).
It's a complete meal! There's carbohydrates from the noodles, protein from the egg and minced meat, minerals from the dried anchovies, and nutritional fibers from the vegetables. I think these are called Bok Choy. It was cooked perfectly that the colors are still bright green and crunchy.
