Let me share with you our food yesterday. I always try to make our meals simple yet delicious and nutritious, and I always want to serve beautiful dishes for my family.
Lately, I wanted to have some fish for our meal, so the other day we had fried bluefin trevally or "mamsa" in Visayan, some veggies, and ground pork for my daughter because she can't eat any seafood. Yesterday, we had another kind of fish again. It's milk fish, and I paired it with some tofu, especially for my daughter, since she likes tofu that much.
So, without further ado, let's see how it was done.
"Braised Tofu" and "Fried Milk Fish"
INGREDIENTS:
- Tofu
- Onion
- Garlic
- Spring Onion
- Ground Black Pepper
- Garlic Powder
- Soy Sauce
- MSG
- Magic Sarap Seasoning
- Knorr Liquid Seasoning
- Sugar
- Canola Oil
- Garlic Oil
- Cornstarch
- Water
For Fried Milkfish...
- Milkfish
- Salt
- Ground Black
- Pepper
- Salt
- Canola and Garlic Oil
PREPARATION:
For Braised Tofu:
Pat the tofu dry with a kitchen towel. Slice into cubes and then set aside.
Wash and peel the onion, then slice or cut into your desired shape.
Crush and mince the garlic.
Wash spring onions. Cut the head part into smaller pieces and cut the green part into a bit longer pieces.
For the Sauce:
In a clean bowl, add some garlic powder, ground black pepper, magic sarap seasoning, sugar (brown or white will do), soy sauce, and liquid seasoning.
Mix and combine them all together. Then add 1 cup of water. Stir and mix, and then add the slurry. Continue stirring and mixing well. Then set aside.
For the Fried Milkfish:
Wash the fish thoroughly. It's already cut and has no fins from the market, so I just needed to wash it. After washing the fish, rub a little salt on it.
Then let's prepare some mixture of powdered coating to prevent oil splatters when frying the fish but it also adds flavor.
Mix some garlic powder, ground black pepper, and cornstarch. Then coat the fish individually and set them aside.
COOKING TIME:
Heat some canola and garlic oil in a pan. Then fry the sliced tofu until finished. Transfer the fried tofu to a plate with a kitchen towel to absorb excess oil.
Heat the pan again then put a little of canola oil, add the white spring onions and garlic. Sauté them until aromatic.
Then add the fried tofu and sauté for just a few seconds, about 30 seconds, and then gradually add the sauce. Let it simmer for a few minutes.
Then add onion and green spring onions. Continue to simmer until the sauce thickens. And... It's all done.
For the fish...
Just fry the coated fish until it's finished.
And there we have it. A simple meal, but delicious and nutritious dishes for the day.
