Today, I wanted to share the dish I cooked yesterday for our meal. It's an easy and simple dish but delicious, healthy, and nourishing called "Carrot-Apple-Pork Rib Soup".
Pork Ribs can be considered a healthy food when we eat it in moderation, and we should choose the good part of the pork ribs, I mean those cut with little to no fat. It is a good source of protein that we need in our bodies, too. Combining it with carrots, apples, and some leafy vegetables makes it healthier.
As we all know, carrots are a good source of various vitamins and minerals, especially beta carotene. Apples are a good source of various nutrients, including fiber, vitamin C, and various antioxidants. So even if it's combined with pork, it is still considered a healthy food. So without further ado, let's take a look at how I prepared and cooked it.
"Carrot-Apple-Pork Rib Soup"
INGREDIENTS:


- Pork Ribs
- Carrot
- Apple
- Bok Choy
- Onion
- Ginger
- Spring Onion
- Green Chili
- Garlic Powder
- Ramyun Spicy Seasoning
- Magic Sarap Seasoning
- Salt
- Pork Cube
- Water
PREPARATION:


Wash the pork ribs thoroughly.
Wash and peel carrots, and then cut them.
Wash the apple thoroughly, then peel, remove the seed and core, and cut.
Peel onions, then wash and then cut them.
Wash the spring onions and then cut them into two different sizes.
Wash and peel ginger, then cut it thinly.
Set all the ingredients aside.
COOKING TIME:




Boil some water in a cooker and then blanch the pork ribs for a few minutes to remove some impurities. Skim off any fats from the surface of the boiling water. Then remove the pork ribs, transfer them into a bowl, and rinse with cold water. Strain and drain.


Boil some water again. When it starts to boil, add the blanched pork ribs back to the pot along with the ginger, and season with just a small amount of salt and a little of the magic sarap seasoning to taste. Cover the cooker and bring it to a boil for a few minutes.




Then add onions, green chili, and the white spring onions. Cover again and continue cooking until the pork becomes tender. Then add carrots, apple, and then the pork cube.
Add also a little garlic powder and ramyun spicy seasoning to enhance the flavor and to have a nourishing kick of spiciness. Cover the cooker again and continue cooking until the carrots and apples become crisp and tender.
Then add the bok choy and continue cooking for a few seconds.
Finally, I topped it with some spring onions. You can also add more when you're done transferring it to your serving bowl just like what I did below.




And there it is, our simple but very delicious and nutritious carrot-apple-pork rib soup. As always, my family loves it. The blending of the savory flavors of ginger and apple in the soup was truly superb and nourishing.
