I hope you are all having a nice day. It's almost weekend, so it is a nice time to relax. And what's a better way to relax than eating some good and nutritious food.
Today, I am going to share another recipe which I call "Tofu with Egg and Tomato Stir Fry". I hope you like it!

INGREDIENTS:
- Tofu
- Eggs
- Tomatoes
- Ginger
- Garlic
- Spring Onion
- Ketchup
- Hot Sauce (Tabasco/Ramyun Powder)
- Soy Sauce
- Salt
- Water
- Oyster Sauce
- Canola Oil
PREPARATIONS:
Pat dry tofu with kitchen towel. Set it aside and let it dry for a couple of minutes.
Cleanly wash tomatoes, spring onion, ginger and garlic. After cleaning them, I sliced all these ingredients with the shapes and sizes I desired.
For the tomatoes I sliced them into small cubes. For the ginger, I sliced it in strips. And for the garlic, I crushed them into small pieces. Lastly, I thinly cut the spring onions.
And then I was checking the tofu if it is dry enough to be cut or sliced. I sliced the tofu into cubes. And then I beat some eggs... poured and mixed in the cubed tofu with it for coating. Then set aside.
This time, I am preparing for the sauce. In a bowl, I mixed these ingredients: ketchup, soy sauce, oyster sauce, ramyun powder (since I am out of hot sauce) and a little amount of salt. Then set aside.
COOKING METHOD:
Pan fry the coated tofu slightly, just enough to let the eggs stick to the tofu. Take them out from the pan and then set aside.
On another pan, I heated a small amount of canola oil and then sauteed the garlic and ginger until their aroma came out and their color became brownish.
And then, I added the tomatoes.
Stir them lightly until the tomatoes are a bit melted. And then I poured in the mixed sauce I made.
Let it simmer and then add a little water.
Simmer it again and put in the pan fried coated tofu and spring onion.
Cover the pan and continue cooking for about 5 minutes. And it's all done!
