Is there a time when you make or cook food without a specific name or recipe to follow?
It happens to me sometimes and it's really fun creating my own recipe on the spot without thinking about what to make as long as I enjoy cooking in my style and consider how healthy or nutritious it is. Well, I did it in one of my dishes yesterday. We sometimes have boiled eggs for breakfast.
We had some yesterday and something came to my mind. I wanted to make the eggs more flavorful for our lunch. I don't know what to call this menu because it's just an experimental one, so I’ll name this "Flavorful Boiled Eggs" then... hehehe☺
So here's how I made it...
Flavorful Boiled Eggs + All Foods We Had Yesterday
INGREDIENTS:
- Eggs
- Cabbage
- Onion
- Garlic
- Spring Onion
- Tomato
- Cheese
- Magic Sarap Seasoning
- Ground Black Pepper
- Soy Sauce
- Ketchup
- Butter
- Slurry (Cornstarch and Water)
- Pineapple Tidbits
PREPARATION:
Grate the cheese and then set aside.
Wash the cabbage. Shred or cut them thinly. And soak them in cold water.
Peel and wash the onion and cut it into small pieces. Also, cut some rounded onions for decoration.
Crush and peel the garlic and cut it into small pieces.
Wash tomatoes and then cut them into small pieces. Separate some for toppings or decoration.
Wash spring onions and cut it into small pieces.
Dissolve 1tbsp of cornstarch with two tbsp of water. Then set aside.
COOKING TIME:
Boil the eggs until they are fully cooked.
Then transfer the eggs to a big bowl and soak them in cold water.
When they're cold enough remove all the eggshells. Then slice the eggs in half. Then set aside.
As for the sauce, mix the juice from pineapple tidbits with 1/2 cup of water, soy sauce, ketchup, and ground black pepper.
In a pan or cooker heat 2tbsp of butter. Sautee onions, garlic, and tomatoes. Then push them on one side and sauté the pineapple tidbits on the other side. When the pineapple tidbits are slightly cooked already, remove them, transfer them to a plate, and set aside.
Continue sautéing the spices and then add the prepared sauce. Let it simmer for a few minutes then add some grated cheese. Continue stirring until the sauce thickens and then carefully and gradually add the sliced eggs.
Continue cooking for another few minutes until the eggs absorb some of the sauce. Then carefully remove the eggs one by one and transfer them to a plate.
Pour the sauce into the silicon molder which is already bedded with some whole cabbage leaf. After putting the sauce arrange all the eggs in the molder.
Add the fried pineapple tidbits, cheese, rounded sliced onions, the flowered tomatoes, and the green spring onions.
Then cook again through an air fryer to enhance the flavor even more. Then take it out from the air fryer and let it cool down a bit. Transfer some to a serving plate and add some shredded cabbage with just kalamansi juice in it as a side dish.
I happily served it to my family and as usual, they loved it. The simple hardboiled eggs have playful flavors in them now.
Because I am so happy with my experimental dish, I might as well share all the foods we had yesterday.
We had some wheat bread with chocolate spread and hot coffee for breakfast. We had some boiled eggs too.
Then our afternoon snack was a carrot cupcake again that my daughter @tegoshei baked. I asked her to make it again because it is one of my favorites. It's really yummy..heheh and we paired it with guyabano salad. (Guyabano fruit with just condensed milk in it) They were satisfying snacks.
For our dinner yesterday, we had sautéed ampalaya or bitter gourd with egg. I posted my detailed recipe for this dish here some months ago already. And because I still had some cabbage left, I made a vegetable salad too.
These are shredded cabbage, shredded carrots, thinly sliced cucumber, thinly sliced raw tomato, and thinly cut spring onions. I mixed the veggies with lemon, a small amount of white vinegar, ground black pepper, a pinch of salt, and white sugar. (It is much better to use honey instead of sugar but we don't have it)
And I also heated the leftover chicken adobo and included it in our dinner.
And there you have it...!!! Those were our satisfying meals yesterday.
