Let's have some Biko with Mixed Nuts and Raisins...

Let's have some of our native kakanin called "Biko", which is one of the famous glutinous rice cakes in our place. Originally, it only had latik, or coconut curd, in it. But nowadays, we enjoy making twists on our food, from the original recipe into different versions. My biko this time has a mixture of raisins and mixed nuts, and it's awesomely yummy!

So, let's have a look at how I did it.


Biko with Mixed Nuts and Raisins



INGREDIENTS:

  • 6 cups Glutinous Rice
  • 4 cups first extract Coconut Milk
  • 6 cups second extract coconut milk
  • 1/2 cup Mixed Nuts(crushed)
  • 1/2 cup Raisins
  • 1 cup Brown Sugar
  • 1 tbsp Vanilla Extract
  • 1 tbsp Calamansi juice


PREPARATION:

Wash the glutinous rice three times, then strain.
Extract the coconut meat twice and separate the first extract or first gata from the second extract milk.
Crush the mixed nuts.
Set them aside with the rest of the ingredients.
Prepare a pot or rice cooker. Put the washed rice in a pot or rice cooker.
I had 6 cups of glutinous rice, so I added 6 cups of the 2nd extract of coconut milk to it.

Now, let's start cooking.

COOKING TIME: 🔥




Turn on the heat of the rice cooker and cook the glutinous rice with the second gata. When it's cooked, turn off the heat and set it aside.

Now, let's turn on the cooker or pan. Add the 4 cups of first extract gata. Then add 1 cup of brown sugar and mix until the coconut milk has reduced slightly and become a bit sticky.

Then, add the mixed nuts and raisins. I didn't add salt because the nuts are already salted. Continue stirring for a few minutes, then add the vanilla extract and calamansi.

Then add the cooked glutinous rice gradually. Continue stirring and tossing to mix and combine all the components very well.

You can also add sugar or a little condensed milk if you prefer a sweeter taste. But for my family, we used to adjust our flavoring nowadays, especially when it comes to sugar and salt.

And that's it... We're all done. I cooked this much because we also shared some of it with our neighbors. I cooked this during Max's birthday. This pairs well with black coffee or tea.

And it's also tastefully good with some Coca-Cola. However, it's been years since we cut soft drinks from our diet. So, it's better with black coffee or tea.
