Let's have some "PORK GINAGMAY"!

Pork Ginagmay or Ginamay is a Filipino stew just like menudo, but only differs in the size of the cuts of pork and veggies. In ginagmay, we cut the pork and veggies into small pieces. The name "ginagmay" itself means small or cut into tiny pieces, in Cebuano.

So, here's my version of "pork ginagmay". Let's have a look at it.


My Pork Ginagmay (Cebuano)



INGREDIENTS:

  • Pork
  • Carrot
  • Potato
  • Bell Pepper
  • Onion
  • Garlic
  • Green Peas
  • Tomato Sauce
  • Soy Sauce
  • Knorr Liquid Seasoning
  • Knorr Pork Cube
  • Magic Sarap Seasoning
  • Salt
  • Sugar (optional)
  • Cornstarch (for slurry)
  • Ground Black Pepper
  • Water
  • Canola Oil


PREPARATION:

Wash the pork thoroughly, then cut it into smaller cubes.
Wash and peel the potato, then cut into small cubes.
Wash and peel the carrot, then cut it into small cubes.
Wash the bell pepper, cut and remove the seeds, then cut into small cubes.
Peel and wash the onion, and then cut it into small pieces.
Crush and peel garlic, then cut into small pieces.
Cut the cheese into small cubes.
Set all the ingredients aside.

COOKING TIME:



Heat the pan or cooker. Stir-fry the pork with its own oil. Add a pinch of salt and ground black pepper. Stir until it evaporates, the oil renders, and the pork becomes brownish in color.

Remove the pork from the pan and transfer it to a plate or bowl, then set aside.

In the same pan with the remaining oil, sauté the bell pepper for just a few seconds, then remove it immediately and transfer it to a plate or a small bowl.


Again, in the same pan, add a little amount of canola oil, then sauté onions and garlic until aromatic.


Then, put the pork back and sauté them together for a few minutes.

Add tomato sauce, stir to mix, and then add water and let it simmer for a few minutes. Season with soy sauce, Knorr liquid seasoning, and pork cube. Continue cooking for another few minutes until the pork becomes tender.




When the pork is already cooked and tender, add the carrots and cook for 5 minutes. Then, add the potatoes and continue cooking for a few more minutes.

When the veggies are already crisp and tender, add just a pinch of Magic Sarap seasoning and a pinch of sugar to enhance the flavor. Then add a little slurry to have a bit thicker sauce.

Then, add the green peas, bell pepper, and cheese. Continue cooking for a few seconds.



And that's it... my version of pork ginagmay is ready to serve while it's hot.

My family loves it, especially my daughter @tegoshei, who requested this dish today. She might be craving this dish because I rarely cook it at home.

I am glad to see her so happy when she saw the food when she came out after her work at lunch. So, cravings satisfied my dear daughter...heheh
