Again, I'm inviting you to join me in my journey of cooking. I just feel like cooking is an important skill that everyone should learn. I am so lucky and so happy to join this platform because I've seen a lot of various cooking skills on Hive. With that, it can help me to expand my knowledge in cooking and make better food for my family and of course for myself too.😊


Translation: This is what I followed.



Anyway, the dish I cooked recently was shared by my daughter's best friend. She loves to cook too and sometimes she shares with me the recipes she knows. Last Thursday, she sent me a recipe that she found online and tried to cook. I also decided to try it out, but with a twist to make my own version.

So here it is...

Pininyahang Manok sa Gata or Pineapple Chicken in Coconut Milk



INGREDIENTS:




  • Chicken
  • Potato
  • Carrot
  • Pineapple Chunk
  • Coconut Milk
  • Ginger
  • Onion
  • Garlic
  • Bell Pepper
  • Chicken Stock
  • Knorr Chicken Cube
  • Ground Black Pepper
  • Salt
  • Canola Oil
  • Soy Sauce
  • Tomato Paste
  • Water


PREPARATION:




Clean and wash the chicken. Then marinate it with the juice of pineapple chunks, soy sauce, and ground black pepper.
Wash and peel the potato then slice it into cubes or into any shape you like.
Wash and peel the carrot and slice it into your desired shape and size.
Peel and wash the onion then cut it into small pieces.
Crash and peel the garlic then cut it into small pieces.
Wash and peel the ginger then cut it into strips.
Wash the bell pepper and then cut it into cubes.
Extract the juice or milk from the coconut milk and then strain it well.
Set all the ingredients aside and let's proceed to cooking.

COOKING TIME:





Heat some canola oil in a cooker or pan. Sautee onions, garlic, and ginger until aromatic.



Add the marinated chicken and sauté them together with the aromatic spices until they’re a little brownish.




Then add the chicken stock and chicken cube. (I still added the chicken cube even there was already chicken stock because the chicken stock I had had no flavor, it was the chicken stock from the chicken I cooked for the fur babies without any seasoning that's why I added the cube to make it flavorful).

After putting the chicken stock and chicken cube, let it simmer until the juice is reduced.





Then, add the potato, carrot, pineapple chunks, and tomato paste. Mix them well, then add the bell pepper. After mixing them well, add the coconut milk.

Season it with a pinch of salt, just a little of vetsin(MSG). Then continue cooking by covering the pan and letting it simmer on low to medium heat until the juice is reduced and thickened.




And there it goes, our pineapple chicken in coconut milk is already cooked.



So, let's transfer it to a serving plate... then serve, share, and enjoy. This is really good over white or brown rice.
