Pork Adobo with Pineapple Chunks

Let's have some "Pork Adobo with Pineapple Chunks" on this gloomy Saturday.

Yes, it's gloomy here now in our place, and it rains from time to time. However, it's just a light on and off rain. So, it's good to relax and eat some comfort food with family.

Let’s check my version of this dish.

Pork Adobo with Pineapple Chunks



INGREDIENTS:



  • Pork belly
  • Pineapple Chunks
  • Garlic
  • Onion
  • Bay Leaf
  • Whole Pepper
  • Paprika
  • Ground Pepper
  • Soy Sauce
  • Syrup from Pineapple Chunks
  • Kalamansi Juice
  • Sprite
  • Water


PREPARATION:



Wash the meat thoroughly and then cut it into the typical adobo cut size.

Peel and wash the onion, then cut it into smaller pieces.
Peel and crush garlic.
Set them all aside with the rest of the ingredients.


COOKING TIME:

Heat the pan on the stove and then put the cut pork in it, then sauté without adding cooking oil, and wait until the pork's oil renders.

Then add the garlic, and sauté with the pork for a few seconds.

Then add onions, and sauté them together for about 2 to 3 minutes.

Then add kalamansi juice, syrup from pineapple chunks, and about 1/4 cup of Sprite just to help tenderize the meat. Well, it adds flavor too, but only a little amount of Sprite.

Stir and mix them, and then cover the pan and let it simmer for a few minutes.

Then, add the bay leaf and whole pepper, soy sauce, paprika, and a little ground pepper. Mix them well by stirring, and then cover the pan again and continue to simmer for a few more minutes.

Then add vinegar and 1/2 cup of water.

Cover the pan again and continue cooking until the meat becomes soft and tender.

Then add the pineapple chunks, mix them with the pork, and then cover again and continue to cook for at most 5 minutes on low heat.

It is ready to serve while it's hot, and is good to have some fruit dessert too, like this yellow watermelon.

What a satisfying, yummy meal with my family!!😋. However, it was not too healthy because the pork was quite fatty. We need to cheat on our diet sometimes. 🤫😊

Pork in kind of sweetness. Loved to taste this kind of viand. This is how I cook adobo. It is good to have pineapple.

Wow, this pork adobo with pineapple chunks looks so delicious! Its also my all time favorite dish, the perfect balance of sweet slaty and savory flavors. You will definitely end up asking for extra rice with this one.
