Pork Igado without Liver

My first homemade dish in 2026 was Pork Igado without liver. I've been watching some of the reels on YouTube on how to cook this dish for so long, but I haven't tried cooking it, even though I'm curious and interested, because there is pork liver in it.

Originally, pork liver or liver spread was one of the main ingredients of this dish. But to be honest, I really don't like to eat pork liver, although liver spread is fine with me. Out of curiosity, I ended up researching some alternative ingredients to use instead of pork liver. Among them is mashed beans, which is available at home.

So, I decided to try cooking this recipe at home using other ingredients.

Pork Igado without Liver



INGREDIENTS:


  • Pork Belly
  • Potato
  • Carrot
  • Bell Pepper
  • Onion
  • Garlic
  • Baked Beans
  • Green Peas
  • Cheese
  • Vinegar
  • Soy Sauce
  • Knorr Liquid Seasoning
  • Knorr Pork Cube
  • Ground Pepper
  • Salt
  • Canola Oil
  • Water


PREPARATION:



Wash the pork belly thoroughly and then cut it into strips.
Wash and peel the potato and carrot, then cut them into strips.
Wash the bell pepper, remove the seeds, then cut in strip.
Grate some cheese.
Mash the baked beans from the can.
Strain the water from green peas.
Peel and wash the onion, then cut it into small pieces.
Crush and peel garlic, then mince.
Set all the prepared ingredients aside, and let's start cooking.

Heat some canola oil in a pan and then sauté potatoes and carrots until they are partially cooked. Then add the bell pepper and sauté it with the partially cooked veggies for about two minutes. Then remove them from the pan and transfer them to a plate or bowl, and then set aside.

With the remaining oil in the pan, sauté onions and garlic until aromatic.

Then, add the pork and sauté it with the aromatics until it becomes brownish.

Add the bay leaf and pork cube. Stir and mix until the pork cube dissolves.

There's a lot of excess oil from the pork, so I removed it and put it into an empty mug.

Let's continue cooking.

Add 1 tbsp of vinegar, 2 cups of water, and a pinch of salt to taste.

Cover the pan and let it simmer for a few minutes.

Then add soy sauce, Knorr liquid seasoning and a little ground pepper.

Continue cooking at low to medium heat until the water reduces and the pork becomes tender.

Then add just 1 to 2 tbsp of grated cheese, and then the strained green peas and the mashed baked beans.

Stir for a little while and then cover again and continue cooking for a few minutes.

Then, finally, add the fried veggies. Mix them well and cook for just 3 minutes.

And there it is...all done.😊

Surprisingly, it was yummy. The mashed baked beans and grated cheese blended very well with the sauce.

This is one of our New Year's Eve dishes or Media Noche. We shared some of our dishes with our new neighbors, friends and relatives, and we received a bunch of food from my sister and from our new neighbor too.

I'm really glad and grateful for our first new year celebration in the countryside.
