Hello Ma'am. Same here, when I cook fried rice, I sauté first the garlic and followed with egg. I always want the egg to be well-cooked before adding the rice and other ingredients. Sometimes, when the egg is not well-prepared, there's this smell that I don't usually like. So well-done egg is good for cooking fried rice.
