Happy Saturday Hivers!
Two days ago, we visited my mother’s brother who lives quite far from town. When we arrived, they were busy in their garden harvesting vegetables, and one of the crops they gathered was squash and winged beans. I was really happy when I saw the winged beans because it has been a long time since I last ate them. I haven’t even seen them in the market, where I live.

When we got home, of course, I didn’t let the day pass without cooking them. I sliced the vegetables, but I didn’t use all the squash since it was quite a lot when sliced. I only used half of it.

After preparing all the ingredients, I first rendered the pork until the fats were released and the oil came out. Then I sautéed garlic and onions. After that, I added the pork back and mixed it well before adding the squash. When the squash became slightly tender, I added the winged beans and seasoned everything. After a few minutes, our dinner was ready.

Life in the province is really nice because you can enjoy fresh food without spending much, especially when you grow your own vegetables or when neighbors and relatives share produce from their gardens.

It may be a simple dish, but for me, it was very delicious. We really love eating vegetables since we were young, so we are already used to meals like this.

Thank you for reading and see you on my next blog. Cheers!
