Butterfly pea sticky rice in coconut milk and ripe mango.

Hello everyone. How are you today? I hope all is well with you and your family. Every year this month in my district there are many ripe mangoes for sale and they are very cheap. Every market and shops in the community will have ripe mangoes for sale. Or even supermarkets. Ripe mangoes can be eaten fresh and used in desserts, ice cream and other. My family all love to eat ripe mangoes. Especially son and granddaughter. But there are no ripe mangoes in our home garden. So we buy a lot of ripe mangoes from the market. Besides eating fresh ripe mangoes, my wife likes to make sticky rice in coconut milk with ripe mangoes. And our family loves to eat sticky rice in coconut milk with ripe mangoes too. This post, I want to share the sticky rice in coconut milk with ripe mangoes my wife made. But this time it was butterfly pea sticky rice in coconut milk and ripe mango. We have butterfly pea in our home garden and my wife picks them from the garden to use as ingredients.

Ingredients for butterfly pea sticky rice in coconut milk and ripe mango.

  1. sticky rice
  2. butterfly pea
  3. coconut milk
  4. ripe mango
  5. sugar
  6. salt
  7. corn starch
  8. water

Boil butterfly pea with water in the microwave to make butterfly pea water.

Cook the sticky rice with butterfly pea water until cooked. And put sticky rice in a container.

Then put the pan on the stove. Add the butterfly pea water and add coconut milk in the pan. Then add salt and sugar in the pan. Stir all ingredients until mixed with coconut milk in the pan. Stew until the coconut milk boils.

Then pour coconut milk in butterfly pea sticky rice. Stir sticky rice with coconut milk and place in a container for about 30 minutes. It's finished, butterfly pea sticky rice.

Make the coconut milk again. But this time it's the coconut milk for pouring in the butterfly pea sticky rice and ripe mango. Put the pan on the stove again. Then add coconut milk, corn starch, butterfly pea water and salt in the pan and stir. Stew until the coconut milk is boils and sticky.

Finally peel and slice the ripe mango. Then scoop the sticky rice in the plate. And put the sliced mango on the plate. Add coconut milk to sticky rice and ripe mango. It's finished, butterfly pea sticky rice in coconut milk and ripe mango. Enjoy 😋

this is really a perfect combination mango sticky rice. it was very famous in thailand and later on it was available in the philippine market. that purple flower we put it in the water and drink.

Same here, mangoes are cheaper at this time of the year. Yummy mango sticky rice with coconut milk; this also became popular here in the recent years. This butterfly pea looks familiar here but I didn't know that it's edible. For sure, it has some health benefits also, so it's nice to incorporate it in our food preparation. I've learned something about this plant today. Thank you.

Sticky rice and mango might be a weird combination to eat, but, for us, it's soo yummy! We usually paired this food with "sikwati" a traditional choco milk. And often served during breakfast.

Wow, it's making me drooling. I love riped mangoes. Every October in our place, it's the season of mangoes so i can just pick in our backyard. And yahh when it's season, mangoes are cheap especially if the supply is high. And about the sticky rice, it's my second time to encounter this food. I would love to try it and the butterfly pea too with coconut and riped mango. I think it's a good combination as looking at the picture, it looks mouthwatering. Thanks for sharing this.
