Hello hivers of this amazing Aseanhive Community! I was away in this platform for two weeks I think because I'm very busy on my students, I had a very big adjustment so far on my time in the workplace, part time and to my kids and home chores. And also three days ago I went back to my hometown and finally I'm back with so many stories to tell.
Eggplant is my most favorite vegetable when it comes to cheaper category. Eggplants can vary from so many recipes. It could be fried, grilled or steamed. Today I'm going to share to you a very simple and fast eggplant recipe.
These are the ingredients needed in this recipe.
Eggplant
Onion
Ginger
Onion leaves
Salt
Vinegar
First thing to do is to wash the eggplant. I use water and soap. I always grab some sponge and wash the entire body of the vegetable with soap and then cleanse with water. I cannot assure if the eggplant had insecticides or pesticides a day ago or two days ago which is not really a good sign to be eaten. So to be safe it must be wash with soap, and it must be a dishwashing soap.
Then cut it into slices that suits the sizes you like. It could be long or short. It's okay to be long because you can eat it directly, while on smaller size you can eat it like on a budget and it is more easy and fast to cook.
Then I prepared all the spices and set it aside on a plate.
Then on a pan. Boil a water and when it boils put all the eggplant. You must not put the eggplant if the water doesn't boil because it causes the eggplant discoloration and difficult to cook. Approximately it will be cooked in 5 minutes in a medium heat.
Then when it's already boiled and it's soft it's ready to separate it from the water. Then on a bowl put all the spices, salt, msg and vinegar.
Mix it well and it is now all set. Bring out your rice out there and let's eat together. It's so beautiful and tasty. My cravings is satisfied today!
