Fried rice for breakfast

What did you had for breakfast today?

Good morning all,

Today I would love to share with you my simple fried rice recipe that I've cooked today.

In Malaysia it's quite common to use ginger torch flower(in malay it's called bunga kantan)in our fried rice dish to make it more delicious and fragrant.

So let's begin..

Ingredients:
  • Steamed rice

  • Eggs(I used two eggs,you can use more or less to ur liking)

  • Ginger torch flower

  • Garlic

  • Chillies

  • Salted dried shrimp

  • Cabbage

  • Carrot

  • Fresh sweet corn kernels

  • Soy sauce

  • Chicken Stock(Powder type)

  • Fragrant Sesame oil

  • Cooking oil(I use sunflower oil)

All of the ingredients you can just estimate how much u want to use for how much rice that you are going to cook.

First of all you can just peel off the hard part of the ginger torch flowers and just use the inner softer part of it.
Chopped ginger torch flower, garlic, chillies & salted dried shrimp.
Set aside.

Then finely slice cabbage and chopped the carrots.

Once you have prepared all of the ingredients including the eggs ,fresh corn kernels and steam rice.
It's time to cook.
For the steam rice normally I would use leftover rice from the day before that I've leave it in the fridge.
So it's easier to just use it the next day.

Now let's prepare your wok for cooking.

Heat up your wok and add some cooking oil.

Once the oil is heated up..
In medium heat,toast in the eggs and fried it while stirring it to break it up into scrambled egg.

Next toast in the chopped garlic,chillies, salted dried shrimp and ginger torch flower.
Stirred fried it together with the scramble egg until it's fragrant.

Smells so good!

Now toast in the cabbage and carrots.
Stirred fried it together with the rest until the cabbage and carrots changed a little of their colour.

Now toast in the fresh corn kernels and rice.

Then add some chicken stock powder and soy sauce to taste.(Be careful not to add too much or else it will be salty as we have already added in some salted dried shrimp before)
And then mixed it all up and give it a try for the taste.
If the taste is a little bland you can always go back and add a little bit more of the chicken stock and soy sauce.

Once the taste is perfect,now you can add a few drops of fragrant sesame oil to make your fried rice even more delicious.
Time to off your gass stove.
