Almond Cookies 🍪🍪




  • Hello everyone! 😆🌼 Today, I made some simple cookies to enjoy with tea or coffee. They are vanilla butter cookies with sliced almonds added in, lightly sweetened with icing sugar. I love the taste and the crisp texture, and they are very buttery and fragrant. This cookie recipe is uncomplicated and easy to follow. 🍪 Ingredients

  • 100g all-purpose flour
  • 60g unsalted butter
  • 30g icing sugar
  • 1 tsp baking powder
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt (omit if using salted butter)
  • 40g sliced almonds
  • 20g sliced almonds (for decoration)



🫕 Instructions

  • Let the unsalted butter sit at room temperature until softened. Add the icing sugar, egg, vanilla extract, and salt.


  • Beat until well combined


  • Once the mixture is combined, sift in the all-purpose flour and baking powder.


  • Knead until all ingredients come together.


  • Add the 40g of sliced almonds.


  • Gently mix to incorporate. Then, refrigerate the dough for about 30 minutes.


  • Shape the dough into cookies by forming balls of about 25g each (or 1 tablespoon).

  • After shaping into round balls, place them on a baking tray, spacing them apart. Gently flatten each ball.

  • Press a few of the remaining sliced almonds lightly on top of each cookie for decoration.


  • Bake in a preheated oven at 160°C (320°F), using both top and bottom heat, for approximately 20 minutes.


  • Remove from the oven and let them cool completely on a wire rack before serving.


  • To store, place them in an airtight container at room temperature to maintain crispness for up to 1 month.

This great for the kids...but I find it difficult looking for this icing sugar..where can buy I that?is ordinary sugar would be okay to use?
