Hello everyone 🤗. When talking about Thai dishes that use a lot of garlic, many people immediately think of this dish as number one: Garlic Stir-Fried Chicken.
Of course, In any Thai restaurant here, this dish is a must have. Even though it's simple to make, its deliciousness comes from the garlic , which is both fried until crispy and used as a garnish, and also chopped and stir-fried to release its aroma. The savory, fragrant flavor from the crispy fried garlic pairs perfectly with the saucy chicken. It's a dish suitable for all ages and easy to prepare.

🧄 Ingredients
- 1 cup of garlic
- 300 grams of chicken
- 5 coriander roots
- 1 head of garlic (for make Sam Kler)
- 1 teaspoon peppercorns
- 1 tablespoon oyster sauce
- 1/2 tablespoon light soy sauce
- 1/2 tablespoon seasoning sauce
- 1 teaspoon granulated sugar
- Coriander (leaves) for garnish

🫕 Instructions
- Prepare the chicken by washing it thoroughly, patting it dry, and slicing it into bite-sized pieces.

- Wash the garlic thoroughly, pat it dry, and coarsely chop it.

- Place a pan on the stove, add oil and the chopped garlic. Turn the heat to low and fry until the garlic is golden brown and fragrant,

- And drain on a wire rack to let the excess oil drip off.

- Pound the for the Three Aromatics paste. ( Thai called Sam Kler) Pound garlic , coriander roots, and peppercorns together in a mortar until a fine paste forms.

- Add 1 tablespoon of the oil used for frying the garlic back into the pan over medium heat. Add the Sam Kler and stir-fry until fragrant and golden.

- Add the sliced chicken. Stir-fry just until the chicken is slightly cooked.

- Season with oyster sauce, light soy sauce, seasoning sauce, and sugar.

- Stir-fry until the chicken is fully cooked.

- Transfer to a serving plate.

- Top with the reserved fried garlic and fresh coriander. Serve immediately.
