Let's cook together!!...The stir-fried okra with minced pork and shrimp paste

  • Okra is very easy to grow here, and it's inexpensive. It's an incredibly beneficial vegetable, but many people dislike its slimy texture. Even though this slime is actually good for your digestive system. Nevertheless, it can be cooked in many ways, such as boiling, stir-frying, deep-frying, or even eating it raw. Today, I tried making a simple dish with it, stir-fried with minced pork. And for those who don't like its slimy texture, I have a tip to reduce it. If you have okra in your kitchen, give this recipe a try!

  • Ingredient preparation time: 10 minutes
  • Cooking time : 10 minutes
  • For 2-3 servings​


Ingredients


  • 1 cup of okra
  • 100 grams of minced pork
  • 1/2 tablespoon of shrimp paste
  • 1 tablespoon of fresh chilies
  • 1 tablespoon of garlic
  • 1 teaspoon of sugar
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of light soy sauce
  • 1 teaspoon of seasoning powder
  • Vegetable oil for frying

Procedure


  • I'll start by preparing the okra to reduce the slime before stir-frying. I wash it thoroughly, gently rubbing off the fine fuzz on the skin. Then, I trim off both ends. If you think the pieces are too big, you can cut them to your desired size.

  • Next, I boil them in salted boiling water (with about one tablespoon of salt) for about three minutes.

  • While the okra is boiling, I prepare a large bowl with very cold water. Once the okra has boiled for the required time, I transfer it to the cold water. Then, I set it aside to drain well. Just doing this significantly reduces the slime.

  • Next, I'll pound the garlic, fresh chilies, and shrimp paste together. I pound them until they form a coarse paste, but you can pound them finer if you prefer.

  • Next step, I prepare a pan over low heat, add vegetable oil, and stir-fry the pounded mixture until fragrant.

  • Then, I add the minced pork and stir-fry it with the paste mixture. I stir-fry until it's almost cooked through, then add a little water.

  • Now, I add the prepared okra and stir-fry until everything is well combined.

  • Next, I season it to my liking. I use oyster sauce, light soy sauce, sugar, and seasoning powder. I stir-fry until everything is well mixed and then do a taste test.

  • And it's done! The stir-fried okra with minced pork and shrimp paste is ready to serve. It looks very delicious!

  • This menu offers a very well rounded and balanced flavor. It has a unique aroma, combined with the blanched, okras that provide a perfectly tender yet slightly crisp texture. The minced pork adds variety in texture and richness to the broth.

  • The flavor is salty, sweet, spicy, and has a rich, aromatic depth from the shrimp paste. All these elements are stir-fried together to create a bold yet not overpowering taste. It's a dish that pairs wonderfully with hot steamed rice.
