- Do you like eating ginkgo nuts? I really love their soft, slightly chewy texture and their unique aroma and flavor. They're also very good for my health. Although I don't eat them often, whenever I do, they make me feel great!
- These are cooked ginkgo nuts, ready to eat from this cup. You can snack on them or add them to both savory and sweet dishes, and even drinks. They're very healthy. Today, I'm adding ginkgo nuts to my shrimp fried rice to enhance the texture and flavor, and to add nutritional value to my dish.
Here's the recipe 😃👇
INGREDIENTS
- Cooked rice 2 cups (preferably cold, day-old rice to prevent the fried rice from becoming mushy)
- 5-6 Fresh shrimps
- 1/4 cup Ginkgo nuts
- 2 Chicken eggs
- Diced carrot 2 tablespoons
- Minced garlic 1 tablespoon
- Sliced green onion 1 tablespoon
- Chopped cilantro 1 tablespoon
- Oyster sauce 1 tablespoon
- Light soy sauce 2 tablespoons
- Fish sauce 1 teaspoon
- Granulated sugar: 1/2 teaspoon
- Ground white pepper 1/2 teaspoon
- Vegetable oil 2-3 tablespoons (for frying)
INSTRUCTIONS
Preparing the Ginkgo Nuts
- The ginkgo nuts I have are pre-cooked and ready to use.I just need to rinse them with water. If you are using dried ones, blanch them in boiling water for about 2-3 minutes. Then, drain them thoroughly and set aside.
Preparing the Shrimp
- Peel the shrimp.I like to leave the tails on. Clean them, devein by slicing open the back, and remove the digestive tract. Let them drain.
Preparing the Eggs
- Crack the eggs into a bowl and beat lightly until just combined.
Cooking the Fried Rice
- Place a pan over medium heat. Add the vegetable oil. Once hot, add the minced garlic and fry until fragrant and just starting to turn golden.
- Add the shrimp and stir-fry until they start to cook and change color.
- Add the ginkgo nuts and stir-fry with the shrimp and garlic for about 1 minute.
- Push all the ingredients to one side of the pan.
- Pour the beaten eggs into the empty space.
- Wait for the eggs to begin to set, then use the spatula to scramble them into small pieces.
- Mixing them in with the shrimp and ginkgo nuts.
- Add the diced carrot and cooked rice. Stir-fry everything together until well combined.
- Season with oyster sauce, light soy sauce, fish sauce, and sugar. Continue to stir-fry so the seasonings coat every grain of rice. Taste and adjust the seasoning if needed (you can add more saltiness or sweetness).
- Add the ground white pepper, sliced green onion, and chopped cilantro. Give everything one final good stir to combine. Turn off the heat.
Serving
- Scoop the fried rice onto a plate.Serve with cucumber slices and a wedge of lemon or lime.
- This plate of shrimp fried rice with ginkgo nuts has a well rounded flavor. It's savory from the seasonings, sweet from the shrimp, and the taste of the ginkgo nuts helps cut through the richness and adds depth. The shrimp have a bouncy, fresh texture. The ginkgo nuts are soft but still hold their shape, with a slightly chewy texture. Before eating, squeeze a little lemon or lime over it and mix it in. This will enhance the flavor and make this fried rice even more delicious! 😃
