Today I made a simple sandwich to enjoy with my favorite cup of hot tea. I used sweet corn for the filling, mixed with mayonnaise. (I initially thought about using cheese, but I decided it might be a bit too rich and heavy since this recipe already uses butter).
The result was so fragrant and delicious! It's definitely an interesting and easy recipe that I can see myself making again and often.
This Sweet Corn and Mayonnaise Sandwich is a perfectly balanced meal. It's fragrant with garlic, creamy from the filling, and has that wonderful crispness from the grilled bread. 🌽 INGREDIENTS
- 1/2 cup cooked sweet corn
- 3-4 slices of sandwich bread
- 3 tablespoons mayonnaise
- 1 tablespoon shrimp eggs (or substitute with finely chopped ham or omit)
- A pinch of freshly ground black pepper
- A pinch of salt
- 2 tablespoons butter
- 1 teaspoon finely chopped garlic
🍞 INSTRUCTIONS
I start by preparing the sandwich filling. In a bowl, combine the cooked sweet corn, mayonnaise, and shrimp eggs. Season lightly with a pinch of salt and black pepper. The natural sweetness comes from the corn and mayonnaise, so I don't add extra sugar in this recipe. However, if you prefer it sweeter, you can add some to taste.
I mix the filling ingredients well until combined and set it aside.
Next, I prepare the bread slices. Today I'm using bread without crusts, but if you're using bread with crusts, you can keep them on. When grilled, they become crispy and delicious! I use a spoon to gently press down the center of each slice to create a small well.
Scoop the prepared filling and place it onto the bread slices. For the sandwiches I'm making today, I'm designing them to be joined into a triangular shape. So, I'm placing the filling as shown in the picture. Of course, you can create any other shape you like!
Use a little water or melted butter to brush the edges of the bread slices. Press them together to form the sandwich, and use a spoon to seal the edges firmly.
Next, I melt the butter in a pan over low heat. Add the finely chopped garlic and stir-fly until fragrant.
Brush this garlic butter generously over both sides of the assembled sandwiches.
Place the sandwiches on the same pan and grill over low heat. This prevents them from burning. Since all the filling ingredients are already cooked, we are just grilling them for aroma and to make the bread crispy and golden. It took me about 5 minutes to grill them.
Place the grilled sandwiches on a plate. They are best enjoyed hot.
