
Happy Monday from Thailand! Today, I tried making Hamburg for the first time, everyone. Hamburg are quite popular in Japan, right? But today, I'm making them Thai-style. I'm using pork instead of beef and a rich, spicy curry sauce instead of demi-glace sauce, seasoning it with Thai flavors for spiciness and the fragrant herbs in the curry paste.
The process is divided into two parts: making the Hamburg patty and making the Spicy curry sauce. The ingredients listed below are also separated into two parts. It's not difficult , just follow these steps!

🥩 Ingredients for the Hamburg Patty
- 300g minced pork
- 2 tablespoons breadcrumbs
- 1 egg
- 1/4 cup fresh milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika powder
- 1 tablespoon seasoning sauce
- 3 tablespoons olive oil
- 2 tablespoons coarsely chopped onion
- 1 tablespoon coarsely chopped garlic
- 1 tablespoon salted butter
🫕 Instructions


- The first thing I prepare is mixing the fresh milk with the breadcrumbs. Set this aside.


- Next, Stir-fry the chopped onion and garlic in olive oil until cooked and fragrant.

- Then, prepare a mixing bowl. Add the minced pork, egg, seasoning sauce, salt, pepper, and paprika powder. And the stir-fry onion and garlic.

- Add the breadcrumb and milk mixture.

- Knead and mix everything together until well combined, then shape it into a patty.

- I will let the hamburg patty rest in the refrigerator for about 10 minutes to let it set.
👉While waiting, I will stir-fry the spicy curry sauce.
🌶️ Ingredients for the Curry Sauce
- 1 tablespoon spicy curry paste
- 1/2 teaspoon shrimp paste
- 1 cup coconut milk
- 1 teaspoon palm sugar
- 1 tablespoon shredded kaffir lime leaves
- Sliced red jinda chilies
🫕 Instructions

- Pour coconut milk into a pan, add Thai red curry paste and shrimp paste, and stir until well combined.

- Heat the pan over medium heat, bring to a boil, then season with palm sugar. Stir until the curry sauce thickens, then add shredded kaffir lime leaves and sliced red jinda chilies. Stir well and turn off the heat.

- Scoop the red curry into a bowl.
Next Step

- Once the rested hamburg patty has set nicely, pan-fry it in a pan with a little olive oil. I will grill it over medium heat, flipping it to brown both sides.

- Add the butter and continue grilling for about another 2 minutes. Still using medium heat.

- Reduce the heat to low, cover the pan with a lid, and let it cook through for about 10 minutes. Then turn off the heat. Scoop the hamburg patty onto a plate.

- Plate it, pour the curry sauce over the top, and enjoy with hot steamed rice.

- The pork patty in the hamburg is tender, juicy, and savory, while the sauce is spicy, rich, creamy, and well-rounded, with a fragrant aroma from kaffir lime leaves and herbs. The two components pair together perfectly.
