Today, I’m making another classic Thai dessert often found in fresh markets or from street food carts on the sidewalk, Kluay Ping" ( It's meo Grilled Bananas. It's best enjoyed hot, drenched in a fragrant, sweet, and creamy coconut sauce. I absolutely love it. I had a bunch of bananas in my kitchen, so I decided to make some myself. It's incredibly easy!
INGREDIENTS
- Bananas: Slightly ripe (not too soft)
- 250 ml coconut milk
- 100 ml clean water
- 200 g palm sugar (or coconut sugar)
- 50 g granulated sugar
- 1 tbsp cornstarch
- 1/2 tsp salt
- 2-3 pandan leaves, tied in a knot
INSTRUCTIONS
Step 1
🍌 Grilling the Bananas
Choose bananas that are slightly ripe; they shouldn't be too soft. Peel them and cut them into segments about 1.5 inches long.
Skewer the banana pieces horizontally onto bamboo sticks.
Grill the skewered bananas until they turn a light golden brown with slightly charred marks. Remove from the heat.
Place the grilled bananas (still on the sticks) inside a plastic bag on a cutting board. Gently press another cutting board on top to flatten them.
Slide the flattened bananas off the skewers and set them aside.
Step 2
🥥 Making the Coconut Sauce
Prepare a pot. Add the granulated sugar, palm sugar, salt, coconut milk, and pandan leaves.
Place the pot over low heat. Stir continuously until the sugars have completely dissolved. Let it simmer for about 5 minutes.
In a small bowl, mix the cornstarch with the clean water until it's fully dissolved and no lumps remain.
Pour this cornstarch slurry into the simmering coconut milk. Keep stirring constantly until the sauce comes back to a boil and thickens. Let it boil for another minute.
Turn off the heat. Let the sauce cool slightly until it's warm. You will get a rich, fragrant, sweet, and creamy sauce.
Serving
- Arrange the grilled bananas on a plate. Generously pour the warm, sweet coconut sauce over them.
