Good morning! It's weekend—again. I was in a bad mood last night and suddenly had the urge to discard a lot of things. Maybe I should do some decluttering later on. For now, I share to you one of the easiest Maja Blanca I made last month.

Maja Blanca is a Filipino dessert made of coconut milk, cornstarch, milk, sugar, water, butter, salt, and corn. It's white in color and has a soft texture, almost like a rice cake. And to complete and add more flavor to the dessert, it is topped with toasted coconut curds or sometimes with grated cheese.
For my version, I'm using grated cheese for the topping because making coconut curds takes a lot of time. Yes, it's easy but it takes lots of patience. And the last time I made one, the coconut milk splattered around which got me traumatized. I have to clean a lot of mess after as well. If you want to have this as your topping, you have to make it way ahead of time. Okay, let's begin!
📝 Here's What You'll Need
- 1 1/2 cups water
- 1 cup coconut milk
- 1 cup evaporated milk
- 3/4 cup sugar
- 3/4 cup cornstarch
- 3/4 cup powdered milk
- 1 cup corn kernels
- 3 tbsp. butter
- pinch of salt
- grated cheese
👩🏻🍳 Let's Cook!!!
1️⃣ Let's begin with the dry ingredients. On a pot, combine cornstarch, powdered milk, sugar, and salt.

2️⃣ The we proceed by adding the wet ingredients. Pour the water, evaporated milk, and coconut milk. Stir until the dry ingredients have been completely disolved.

3️⃣ Place the pot on stove and set the heat to medium. Keep stirring until the mixture becomes thick. Maja blanca is easy to make but will tire you out from stirring. Lol. Don't stop or else the cornstarch will settle at the bottom and your maja blanca won't have a good consistency.

4️⃣ When it begins to thicken, proceed to add the corn kernels. Then keep stirring again.



5️⃣ When the mixture begin to thicken more, you can now add the butter. Continue to stir for at least a minute or two.

6️⃣ When it becomes as thick as the one on the photos below, turn off the heat and quickly transfer the mixture to a container. (Make sure to prepare your container before you begin cooking.) Don't let it sit in the pot because this will begin to solidify quickly and no longer take the shape of your container. I used a 1 liter baking tray, by the way.



I also have a little excess and poured it in a small container.

7️⃣ Flatten the surface to even out the thickness. Then top with grated cheese. Don't hold back and drizzle as much cheese as you want!


Let it cool down to room temperature before putting inside the refrigerator. Chill overnight or at least two days and serve!

The Easiest Maja Blanca!

Truly the easiest version I did. Perhaps, even a kid can make this dessert! This is the first time I made one without the toasted coconut curds and it's still good even with just cheese as the topping.
