Picking Moringa Leaves for Breakast and Spotting A Little Visitor

Hello!!! Belated Happy Valentine's to everyone! Yes, I'm back after a long rest from the hectic Valentine's Day orders. It felt so good to finally immerse in the slow and quiet days again.





About two days ago, the moringa trees in our backyard caught my attention. I only pick some of its leaves when I cook Tinola (chicken in garlic and ginger soup) but sometimes, I fail to get some when the weeds around have grown tall.





Since my father had someone pull the weeds weeks ago, the weeds on the path towards the moringa trees are still short and I was able to get some for my Tinola last night.

The bok choy sold at the grocery were about to rot and had lots of insect bites so I didn't purchase it. I thought I would eat Tinola without some greens (lol) but then I remembered our moringa tree.





Moringa trees grow really tall and when they do, it's difficult to reach its leaves. So my plan was to cut the tall branches before the branches mature and becomes difficult to cut. I noticed my father just let the trees grow tall, then have the branches chopped down months after. I know moringa leaves is a super food and I must be thankful I have it for free in our backyard. So this morning, I decided to make some moringa omelettes to eat more of it!

I guess I'm lucky I woke up early today! Summer is just around the corner that's why I want to do backyard activities early morning again. I went first with the tallest branch.





After cutting it a few times with a pruning shears, the branch slowly and dramatically bended until it rested on the clothesline. Lol. Since it has lots of leaves, I also shared it to my father.

Now it's time to make the omelettes! Yipee!





Making the omelette is very easy! As you see here, I used two eggs and added some ground black pepper and salt.





Then I added handful of the moringa leaves.

Do you wash the moringa leaves? I find it easier to wash it while it's still attached to the stems.





Then beat the eggs along with the moringa leaves.





Add butter on the hot pan and pour the mixture.





I like adding some cheese over my omelette and let it soften as the omelette gets cooked.





And here it is! My yummy and healthy omelette! The taste is good just like the spinach omelette I always make. I think I'm to replace spinach with moringa now. Lol. The only downside is that I think I ate too much of it because there's a bit aftertaste.





I made three more omelettes good for the next three days.






I also made carrot salad because the sliced carrot has been sitting in the fridge for weeks now and it's a waste to let it rot. I only added some cheese, mayo, and honey mustard sauce to the grated carrot.





And prior to the omelette, I also ate my oatmeal with banana, apple, and nuts. Then I had ginger with lemon tea as well.





I had extra slices from the apple so I ate it separately and dusted some powedered milk on it. Have you tried this?





I know, some of you are here for the furry visitor!

While I was approaching to get some leaves of the moringa tree, I was surprised to see a kitten playing around. I think this was the newborn kitten my father found about two months ago.





It sat at the concrete steps and watched me cut a branch. I guess it was curious of what I'm doing. Ah, nosey kitty! Haha!

I tried calling the kitten but it was scared and ran away as I walked back inside the house.






I hope to see little kitty again next time I go to the backyard!

Anyway, it felt like I had a really healthy breakfast today! I've been thinking of new and healthier foods lately because I hear a lot of cases of people undergoing dialysis so I must be more careful and intentional with the foods I eat daily.
