
It's weekend again and I chose my Saturday to be slow-decluttering a bit and cooking some healthy meals. Cooking healthy foods help me feel better physically, like I'm doing something great for myself. Lol. And there's really a deeper appreciation to food when you make it yourself.

On my last visit to the grocery, I bought a 1/4 cut of a squash. I didn't know what to use it for and just bought it because I'll probably figure it out. Unfortunately, there are no dishes on my list that would fit squash. I ended up doing a squash puree again.

Honestly, I thought squash puree is a little bitter and not good but since my mother made it, I loved it and made sure I can make one for myself as well.
I began by peeling the squash and boiling it for around 15 minutes.

Then mashed it. I only used a fork to mash to squash because it's already very mushy.

I added about one half teaspoon of sugar, dash of salt, and half half teaspoon of cinnamon.

Mix, then I added a splash of milk. I guess it's about 3 or 4 tablespoons.

Continue to mix until the milk and squash has blended completely. Then transfer to a container. Let it cool down to room temperature before putting in the fridge to chill for a few hours.

Time to eat!
Scoop some on a small bowl or you can everything, if you want. I prefer to eat only half and save the other for the next day.

For some texture, I also sprinkled some nuts I use for my oats. Lol. It's good!

I also cooked mung beans with tofu. This one is very easy to prepare and cook.
However, I chose to separate the fried tofu from the mung beans this time. I prefer my tofu to be crunchy so I no longer mix it with the mung bean anymore. I only put it on top when I'm about eat.

I've been eating spaghetti for breakfast for a few days now and making these foods felt like a redemption for my health. Lol.
