Savory Chicken with Oyster Mushroom

On my last trip to the grocery, I was glad to find oyster mushrooms on the vegetables corner and impulsively bought one. I'm not sure what dish should I make from it and only used whatever leftover ingredients I have available in the fridge.

One thing I learned in cooking is that you have the freedom to choose what to put in your recipe. In the end, it's your food and your palate you have to satisfy.

Let's begin!




🐔 Savory Chicken with Oyster Mushroom 🍄‍🟫





I was kind of trying to make a stir fry dish but it ended up like the dish called Chopseuy. It's okay it's been a while since I had chopseuy anyway! Lol.

Other ingredients I added for this dish were carrots and the leftover bok choy I used for making Tinola. Actually, I have nothing much more to say so let's just proceed with the complete list of ingredients.




📝 INGREDIENTS:


  • 1 Chicken Breast Fillet (sliced into smaller pieces)
  • Oyster Mushrooms (sliced into bite-sized pieces)
  • 1 Small Carrot (sliced into strips)
  • Bok Choy (sliced into strips)
  • 1 Small Onion (diced)
  • 3 Cloves Garlic (minced)
  • 1 Tbsp. Oyster Sauce
  • 2 Tbsps. Soy Sauce
  • 1 Tbsp. Vinegar
  • ½ Tbsp. Sugar (optional)
  • ½ Chicken Bouillon
  • Ground Black Pepper
  • Slurry (1/2 Tbsp. Cornstarch + 3 Tbsps. Water)
  • Sesame Oil
  • Butter




👩🏻‍🍳 LET'S COOK!


■ Melt butter on pan and saute onion and garlic.





■ Then add the chicken slices.





■ While cooking the chicken meat, proceed to add the soy sauce, vinegar, and dash of black ground pepper. Mix and continue cooking until all the chicken meat is cooked.





■ The add the oyster sauce. Mix and cook for at least 2 minutes.





■ Next, we add the slices of carrot and oyster mushrooms. Mix and let it cook for at least 2 minutes.






■ Then we add the chicken bouillon. Keep mixing until the broth cube has been dissolved. When the sauce tastes salty, you can choose to add some sugar to balance the taste.





■ Next, pour the slurry for some thick sauce. Mix and simmer until sauce has begun thickening.






■ Lastly, add the slices of bok choy and mix. Continue to simmer for 5 minutes or until the carrot slices have soften. Then drizzle some sesame oil. Mix then remove from heat. It's time to eat!





Well, At Least It's Edible!





I'd rate my recipe a 6/10. Lol. It turned out a bit salty so I should've reduced the soy sauce to only 1 tablespoon and increased the cornstarch to 1 tablespoon for the slurry. I didn't follow any recipe and only experimented based on what I think is alright.





I'm happy to be able to eat oyster mushroom again. It's rarely available on the grocery now unlike before when mama was still here. She would always buy and cook a recipe out of it. Anyway, I think the dish I cooked is still good and somewhat healthy. This recipe makes three servings.
