Satay Lilit from Bali

For more than ten years I have worked in my mother's kitchen, I have become accustomed to trying out many recipes. Whether it is a new recipe that I have been curious about for a long time, or because it went viral on social media. However, don't you agree that the influence of social media is extraordinary, including in culinary matters.

However, today I want to make a typical Balinese food whose recipe and method have made me curious for a long time. This is not the type of food that goes viral on social media. However, to find the recipe and method, I clearly have to cheat on social media.


SATE LILIT KHAS BALINESE

In addition to food made from pork, or lawar, of course Bali is also not left behind with its typical food, namely Sate Lilit. Although there is a version using pork, the one I will make will of course use chicken as the basic ingredient. Another thing that I modified is the skewers used. Usually, sate lilit uses lemongrass stalks or flat bamboo skewers, but because I only have regular skewers, I tricked myself into using that.

First, of course, I have to finely grind the chicken fillet along with complete spices such as: shallots, garlic, vegetable oil, ginger, galangal, turmeric, pepper, ground nutmeg, cloves, coriander, grated coconut, and lime leaves. While for the fragrance, I use galangal.

After grinding all the spices and sautéing them until wilted, then mix them together with the finely ground chicken fillet. Don't forget to add seasonings such as broth and salt.

After that, the next step is to stick it on a bamboo skewer and form it into a long shape. For 500 grams of chicken fillet, it turns out to be quite a lot, right? After that, then enter the cooking stage. I just use a Teflon to cook. No need to use oil or margarine, just grill until cooked.

However, there is another thing that should not be missed when enjoying sate lilit. Namely, the Balinese Sambal Matah. With a spicy, savory, and fragrant sensation of shrimp paste and fresh from the lime juice, it is very fitting to enjoy sate lilit.

So, I made sambal matah by preparing: chili, shallots, garlic, tomatoes, lemongrass, lime leaves, shrimp paste, lime and finally hot oil to pour at the end so that the taste is even more delicious.
