
It was a damp and chilly evening in Hiroshima last night and I had just half an hour in which to grab some grub before teaching a private student.
The choice was obvious: A piping hot bowl of gyu-toji udon!
Gyu = "beef" in Japanese. The dish features thin slices of broiled beef.
Toji = a cooking method where ingredients are simmered in a "dashi" broth with beaten eggs, creating a fluffy and lightly scrambled texture.
Udon = thick wheat noodles, a staple in Japanese cuisine.
The dish is garnished with Japanese spring onions, and I added a sprinkle of "togarashi" - chili pepper condiment.
It's a warm and satisfying meal, perfect for a chilly day, and a fine example of Japanese "fast food." I was in and out of the restaurant in about 25 minutes, and arrived at my student's place in good time and fine fettle.
