








When we first moved to our new home, I noticed this well lit restaurant that we passed by on our way back home from work. One time, we decided to stop by and check out what kind of food they offer here. I later learned that they highlight Iloilo's delicacy, a dish named Cansi. It's a shame that I've been in Iloilo a couple of times but didn't have the chance to try the authentic Cansi in Iloilo. I had a few projects and assignments in Iloilo that required me to visit this Province for 3-4 times a year but I only learned about Cansi when we visited this restaurant in Cebu City.
Their menu is straighforward; in times like this, we don't rely on the menu but on the restaurant's staff/waiter. They're better in providing us with insights about the best dishes. We ended up ordering their cansi with bone marrow and kare-kare. Be warned that their servings are too generous; don't overbuy especially if you're eating with a small group!
According to Panlasang Pinoy, Cansi is "Ilonggo version of Bulalo and Sinigang combined". I was surprised that the broth was sour but isn't as sour as Luzon's sinigang. It was my favorite finds that week.
