Hello friends. I started the day by preparing breakfast. My daughter and I had breakfast together. She had oatmeal and I made myself something we call tortilla at home.
Basically, I whisk two eggs, add a pinch of salt and pepper, then cover the mixture with flatbread. I use flatbread, cut into a circular shape. The filling can vary. I use cream cheese, fish, lettuce leaves, vegetables and Parmesan cheese. It’s a very filling and nutritious meal.
After breakfast my daughter went to school and I put away the items I ordered online. First I unpacked my daughter’s socks, which came in a pack of three. I bought six pairs. They’re a bit large, but her previous ones were too small. These should last a long time. I also got a facial cleansing foam. I’m a big fan of this product and order it regularly because it removes makeup so well. I think this is my fourth or fifth bottle. I reordered it this time too. And I bought a new diffuser. It’s 50 ml, a bit small, but it smells amazing. I chose the mango-bergamot scent, which is absolutely lovely. It’s ideal for small spaces and reasonably priced, but it runs out quickly. it lasted only two months. I initially bought the tobacco-vanilla scent, but I didn’t like it much. Mango-bergamot is delightful.
Later I started making something else to eat. Today I decided to make homemade cheese. Homemade cheese is especially great for sandwiches compared to store-bought ones.
Here’s the recipe: you’ll need 1 kg of curd, 1 liter of milk, 2 eggs, some butter, salt and baking soda. I mash the curd with a fork, add the milk and heat it gently without boiling. After 3-5 minutes the whey starts separating from the cheese and the curd slowly melts. I prefer doing this in a water bath. I add the butter and other ingredients, stirring to bring the cheese together.
When the cheese reaches the desired consistency, I transfer the mixture to a container and let it sit in the fridge overnight. This way, I end up with delicious, homemade cheese.
Today, I also wanted to try a new recipe I found online, which caught my attention. It’s something you can enjoy for breakfast or as a snack. You’ll need sandwich bread, hard cheese and some pastrami.
I roll the bread thin, add the cheese and pastrami and bake it in the oven. I bake them at 180°C until golden brown.
They turned out amazing. Some cheese melted out, but the flavor was incredible. I paired it with a sauce made of mayonnaise, French mustard and garlic. It turned out so good. I highly recommend this recipe.
