A whole lot of cassava was harvested last week, and it might interest you to know some of the ways in which cassava is processed.
In my recent post, i narrated how abacha known also as African Salad is gotten from cassava. In this post i will share how you can process cassava into cassava flour.
Cassava flour is a gluten-free flour made from the root of the cassava plant, It is produced by peeling, drying, and grinding the cassava roots. It serves as a versatile alternative to wheat flour in cooking.
How to Process Cassava into Cassava Flour
- A fresh cassava root of about 12 months or more is harvested.
- Remove the brown back of the cassava.
- Wash the peeled cassava root thoroughly.
- Soak the peeled cassava in water for about 2 days, this is essential because it helps to reduce the concentration of some harmful compounds such as cyanogenic glycosides
- Remove the cassava from water and spread on a dry surface under directe sun light.
- Once dried, grind the cassava into a fine powder.
