Lovely dish. I am not a fan of sweet food but for plantain I will make an exception. I love the subtle sweetness of ripe plantain. I agree with you about the fibre content in it. Where I live now we don't get it very easily, but in my native place on the coast of Western India Plantain was bountiful. One of my favorites as a child was the fried plantain fritters she used to make. She used rice flour to dip the plantain in before frying. The rice flour used to have some paprika and salt mixed in it and that sharp spicy yet light covering with the soft cooked sweet plantain was a wonderful taste. When I see your preparation I feel the same combination of sweet and spice and feel like trying it out. Thank you for sharing it with us.
In addition to the recipe it was a crisp well written post.

Wow! Thanks so much for your wonderful engagement and contribution to my blog post. The soft sweet taste of plantain is always satisfying and there are a couple of recipes to try out with plantain. I'm glad to know that plantain fritters was your favorite as a child, Plantain is also my favorite food and I prefer it when ripe because of its natural sweetness.
