Today I join the Creative Sunday initiative and I want to share once again with all of you in this wonderful community. This time I bring you a recipe beneficial for our organism: some eggplant burgers. I roasted them in the oven and then I put them in the pan, achieving a delicious texture and an incredible flavor.
Without further ado, here are the ingredients and the step-by-step:
-3 aubergines
-1 tablespoon salt
-4 tablespoons of oil
-1 red pepper
-1/2 onion
-4 cloves of garlic
-Parsley to taste
-100 grams of bread crumbs
-2 eggs
𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧: 𝕊𝕖𝕡𝕥 𝕓𝕪 𝕤𝕥𝕖𝕡:
- To start the preparation, place in a baking dish the eggplants previously washed and cut in two.

- We put the tray with the eggplants in the oven and leave them for approximately 30 minutes, or until they are completely roasted.
- While the eggplants are roasting, we are going to cut the vegetables into small pieces. We start with the parsley and then peel the garlic cloves, also cutting them into small pieces.
- Next, cut the bell pepper and onion into small cubes.
- Once the time has elapsed, remove the eggplants from the oven. Remove the pulp from the skin and place it in a bowl.

- Add the eggs and salt.
- Next, add the chopped vegetables and, with the help of a spoon, integrate all these ingredients.
- Add the two eggs and the breadcrumbs, mix everything together and let it acquire a manageable and uniform texture.
- Finally, add a little oil to the frying pan and form our burgers, shaping the balls and molding them carefully to form our aubergine burgers.
- When the hamburgers are browning on one side, flip and brown on the other side, then remove and finish with the mixture.
