So for this week, I made a sumptuous meal known as Coconut Rice

I made Coconut Rice and it was fantastic even though it was my first time preparing it this way. I have had coconut rice several times with Pepper Sauce but this will be my first time spicing this recipe up.
Coconut Rice is not just delicious but nutritious as well because all the recipes have one or more nutrients they are bringing into the meal. This delicacy is not expensive to prepare depending on the quantity of rice you are cooking.
Recipe

• Green & Red Pepper
• Green & Red Kidney Beans
• Seasoning
• Salt
• Fish
• Onions
• Groundnut oil
• Carrot
• Green pea.
Preparation.
Preparing Coconut Rice is quite easy and you don't need any special skills to do the magic. Coconut rice for me has nothing to do with having coconut visible in the rice and what really matters for me is the creamy taste of the coconut.
I started by processing the recipes, I washed all the recipe that needed to be washed before going on to process them.
I sliced the green pepper, carrot, tomatoes, onions and green pepper.
I soaked the green beans and red kidney beans in water to make them softer before going into the cooking properly.
I parboiled the rice and also blended the remaining red pepper & tomatoes.
I extracted the coconut milk which is the major recipe needed for the meal.
I achieved this by blending the coconut and draining it milk.
After doing all these things, I went on to the preparation in full.
I put a clean pot on fire and poured groundnut oil into it.
I turned the carrot, green beans, red kidney beans and green pea into the hot oil to fry for a few minutes under low heat.
I added the sliced green pepper, onions and tomatoes into the pot as well and also let it fry under low heat.
After frying everything, I went on to adding the blended pepper into the pot as well. I added the seasoning and salt before adding the fish and allowed it to cook.
I didn't have the intention of frying the fish, I want it cooked so putting adding it to what's in the pot will get the job done.
After frying the sauce for about two minutes, I added the coconut milk into the pot and allow it cook.
I removed the fishes after they were properly cooked and pour the parboiled rice into the pot as well. I stirred very well to make sure that the sauce touched every single rice I poured into the pot.
Finally, I poured the little coconut I chopped earlier into the pot as well and stirred again.
In the end, I had a delicious creamy coconut rice.
