Welcome back to my blog hive family. Hope are in a good health. I went kolkata in Durga Puja for a week. My inlaws are staying there in kolkata. After a long time I went in Durga Puja there.
In kolkata we will get fresh and farm vegetables in market which is very rare in Bengaluru. And in Bengaluru, the rate will be double.
There I saw kankoda ( spiny gourd ) in the market.
Spiny gourd is very beneficial and has vitamins A, C and calcium. My father loves to eat this vegetable alot. In hindi we call it Kantola or kankoda.
So today I am sharing the recipe of Spiny gourd!
**INGREDIENTS **
Spiny gourd- ½kg
Oil-2 tbspn
Cumin seeds-½tbspn
Greenchili-2
Asofedita -½tspn
Turmeric powder -½tspn
Red chili powder -1tbspn
Salt- according to the taste
Garam masala-½tspn
Dry mango powder-½tspn
METHOD
Wash and cut the spiny gourd in slices.
Then heat oil in a pan
Add cumin seeds green chili,
Then add slices of spiny gourd.
Further add turmeric powder and salt mix it properly.
Cover it with lid and let it cook for 7 mins.
Then add redchili powder and coriander powder.
Add some garam masala and dry mango powder and mix it well.
Cook for 2 mins and then off the flame .
Transfer the stir fry in serving plate and have it with chapati
It is really a very flavourful dish and I am sure that you will gonna love the taste and texture.
One important thing I want to share with you all is dont overcook this veggie , it wont taste good if it is overcooked . There will b little crunchyness so that you will like the taste.
