Lately I have been trying my hand in cooking and whenever I get into the kitchen i always try to give the food a decent look. I try to experiment, I try to make new dish and in process i do fail but I most of time my experiments gets well. And todays, I had the opportunity to make a colorful rice all because of the ingredients it has.

I was fed up with eating the regular white rice. I try it different combination like the yellow rice or rice with curd or even the popular Khichdi. But todays I went a step ahead in making lovely dish that really get pass my imagination. I cooked the rice first and then wondering to find something to compliment it. Either i have to make lentils or find a veggies with soup to consume. Then my crazy mind went on to try fried rice. And it came out nicely.

There is no added color or any preservative used in cooking this dish. The lovely color that I got was basically due to the use of beetroot. One of the most undervalued food item in Indian kitchen. Though people like to have it in salads but no one ever try to cook it as far as I know. But the unique blend of color on plate has made my dish very tempting. The dish is made up of veggies, that includes
- 1 Capsicum,
- 2 Onion
- 1 Beetroot
- Peas 100 grams
- oil to fry
- a bowl of boiled rice.
- 2 Green Chili
- Salt to taste.
- Indian spices (Cummins seeds / turmeric)*
- 2 cloves of ginger
- Indian snacks to garnish.
After cooking this, I realize I could have added some dry fruits to give a distinct twist to this.

As u said before, I had my rice already prepared so to make it fried rice, I imagine all the stuffs that a street vendor use to make their stuff delicious. So prepare my cooking i chipped up all my veggies.



I began fry all the veggies on a slow flame, until the water from the veggies started getting separated.

Then I added the peas to fry a little more. Then added my pre cooked rice to it and stir them properly.




The entire process took me little over 30 min. But the outcomes is just worth to crave for more. May be it is going to be my go to to dish for next couple of more days. I garnish them coriander leaves and saved with peanuts and snacks (bhujia)
