Hello guys. Today, we are gonna be making the national Sunday Afternoon food AKA rice and stew!. At this point, I'm already used to cooking.

But ever since I moved into my own place, the experience of cooking has become much more enjoyable.
Knowing that what I'm making is for me and me alone. Heck, it might have to do with the fact that I love my new living situation.
Anyway, I went out and got the ingredients for today's recipe yesterday. Thankfully, I don't have to go all the way to the market to get food items for basic meals. A 2-minute walk outside is enough to locate local shops.
Without further ado, here we go...
Ingredients

Tomatoes
Peppers
Panla Fish
Groundnut oil
Onions
Salt and seasoning cubes
Rice
Procedure
Rice
Basically measure as much rice as you want, bearing in mind that rice rises like Lazarus from the dead😅. So measure with caution.

Rinse the rice until the water runs clear and there are no stone particles in it.
Fill the pot with water that goes one finger above the rice. Bring it to a boil, then take it off the fire and rinse until the water runs clear. After this boil again until the rice is soft enough to chew satisfactorily.
Stew
Blend your tomatoes, peppers and onions. Then place it into a pot and put it in the fire. The plan is to boil down the liquid until it is sort of textured and thick. Add a dash of oil.

When it has boiled down, in another pot - the one you want to use to cook the stew - add some tablespoons of oil. Then add a teaspoon of curry powder, one teaspoon of thyme, and sliced onions.

Fry for 30 seconds then add the tomato mix. Stir continuously on low heat until the tomato tastes sweet and you can see bubbles on top of the stew. Add two cubes of seasoning and one teaspoon of salt.

Add your fish, boiled egg, and stir. Check for taste, and then switch off your gas. Just like that, you've got your delicious plate of rice and stew!
