Salads don't have to be boring or just the typical cucumbers, tomatoes, blah blah...
I couldn't agree more, I love making salads as a main meal and I can make them with all kinds of ingredients, the key for me personally is to have a good balance. I really hate it when I decide to order a salad somewhere when eating out and then receiving 80% lettuce with some toppings, ugh, that's not a salad! That's rabbit food! :)
I've learned that avocados are delicious just a few years ago, sadly in Hungary they were often not of good quality but since moving to Spain, they are here in abundance most of the year. I try to buy them from farmers directly as they last much longer and are so much better in taste as well. It's been a while since we visited that coast though (way overdue for a new load of avocados, yum!)
I love chickpeas but I don't know if I love them cooked, I mostly roast them as healthy snack or as hummus lol, just added them to salads a few times. I planned on grabbing some inspirational recipes soon for that because I notice on the scale that I'm often low on protein since I started eating it a bit less lately. Have to keep the protein up for the baby now too so..
