I’m writing to you from the Creative Cuisine community to share a recipe for “Black Chicken,” which I learned from my mom a long time ago and make every now and then because we all love it. There are many ways to prepare chicken so that it turns out dark—or “black,” as it’s called—using soy sauce, which give it a very savory flavor, but for the sake of my children’s health, I’ve learned to do without them. However, this is a chance to discover other ways to cook chicken, like the one I’m about to share with you—remembering that my mom taught me this recipe, which uses just a few ingredients.
It’s really important to use just a few ingredients, isn’t it? Well, to get started on making this black chicken, here’s what we’ll need.
Ingredients:
- 250 grams of chicken
- 2 potatoes
- 1 small onion
- 3 cloves of garlic
- 4 tablespoons of vegetable oil (I used sunflower oil)
- 1 tablespoon of brown sugar
- ½ liter of water
- Salt, to taste

Preparation:
Now let's get started on the black chicken recipe—you'll see how easy it is to make.

Step 1
I season the chicken with salt and the garlic cloves, which I've crushed beforehand.

Step 2
I place the skillet on the stove with the oil and a tablespoon of brown sugar. I stir the sugar constantly until it dissolves and turns a caramel color.

I'm using my old frying pan—the “warrior,” as I call it—even though I already have a replacement: a set of new frying pans I won. Well, for today, at least, my old frying pan is shining like a star here on Hive 😊
Step 3
I turn down the heat, add the chicken pieces, and immediately stir the caramelized oil into the chicken so that it coats the pieces evenly.
Step 4
While the chicken is cooking, in just a few minutes I slice the potatoes and onion into half-moons.
Step 5
I add the water and the potatoes. I add salt to taste, tasting as I go. Remember that the chicken has a sweet flavor that’s balanced by the salt. I let it boil until the potatoes are cooked.

Step 6
Add the sliced onions and cook until they are translucent.
Step 7
I cover the skillet so the steam can finish cooking the potatoes along with the onions.
This is one of those recipes I love because it uses just a few ingredients but packs a lot of flavor. In fact, whenever I make it, everyone always asks me to make it again—and it’s all thanks to my mom, who’s an excellent cook.

This chicken is truly delicious, with its sweet-and-salty flavor, the taste of garlic and onions, and the potatoes soaked in that rich seasoning. You can serve it with rice, a salad, and baked plantains. It’s up to you how you’d like to serve it.

Los saludo desde la comunidad Creative Cuisine para mostrarles una preparación de Pollo negro, que aprendí de mi mamá hace mucho tiempo y lo preparo de vez en cuando porque nos gusta a todos. Hay muchas formas de preparar un pollo para que quede oscuro o negro como se le llama, usando salsas de soya y salsa inglesa, que dan un gusto muy sabroso, pero por la alimentación de mis hijos aprendí a prescindir de ellas. Sin embargo, es una oportunidad de conocer otras formas de cocinar el pollo, como el que les voy a presentar, recordando que me lo enseñó mi mamá y con pocos ingredientes.
Muy importante eso de los pocos ingredientes ¿Verdad? Bueno, para poder empezar con la preparación de este pollo negro les dejo lo que necesitamos.
Ingredientes:
-250 gramos de Pollo
-2 papas
-1 cebolla pequeña
-3 dientes de ajo
-4 cucharadas de aceite vegetal (Yo usé de girasol)
-1 cucharada de azúcar morena
-½ litro de agua
-Sal, al gusto
Preparación:
Ahora sí, vamos a cocinar la receta del pollo negro y verán que es muy fácil de preparar.
Paso 1
Aderezo el pollo con sal y con los dientes ajo previamente machados.
Paso 2
Pongo el sartén en el fuego, con el aceite y una cucharada de azúcar morena. Revuelvo constantemente el azúcar hasta que se disuelva y se ponga color caramelo.
Uso el sartén viejito, el guerrero como le digo yo, aunque ya llegó un reemplazo, por un juego de sartenes nuevos que me gané. Bueno, pero por hoy el sartén viejito está brillando como una estrella aquí Hive 😊
Paso 3
Bajo el fuego y coloco las piezas de pollo e inmediatamente revuelvo el aceite acaramelado con el pollo para que se envuelva de forma pareja.
Paso 4
Mientras se cocina el pollo, en cuestión de minutos voy cortando las papas y la cebolla en forma de media luna.
Paso 5
Agrego el agua y las papas. Coloco sal al gusto, mientras voy probando. Recuerden que el pollo es con un sabor dulce pero equilibrado con sal. Dejo hervir para que se cocinen las papas.
Paso 6
Agrega las rodajas de cebollas y dejo cocinar hasta que estén transparentes.
Paso 7
Tapo el sartén, para que con el vapor se terminen de cocinar las papas junto con las cebollas.
Listo el pollo negro 😉
Esta es una receta de esas que me gustan porque se hace con pocos ingredientes y regala mucho sabor. De hecho cuando lo preparo siempre quieren que lo vuelva hacer y todo gracias a mi mamá, quien es una excelente cocinera.
Es realmente muy delicioso este pollo, con el toque dulce-salado, el sabor del ajo, las cebollas y el complemento de las papas impregnadas de ese rico sazón. Lo pueden servir con arroz, una ensalada y plátanos horneados. Queda al gusto de ustedes como deseen servirlo.
