Pesto Scapo!

Things are still going a mile a dirt minute up here. Load after thirty yard load of soil is being moved right across the driveway from my garlic patch, but as any gardener knows, plants wait for no one.

So I have lots of scapes. Sooooo many scapes. I even have some bulbs that are ready, and let me tell you, my first bulbs are the biggest and best I have ever grown, just look at this Music garlic bulb!!

Scapes are also coming out my ears. Thankfully, the ranch owner loves scapes so they have taken a bunch of them off of my hands, but I had quite a pile to contend with.

So it was scape pesto time.

I have a bunch of basil growing out in the greenhouse, and while I should use a recipe on such things, I didn't.

What I did do was process the scapes, after taking the woody ends and bulb off, in the food processor, added a handful of basil, threw in some lemon juice, parmesan, salt, pepper, and toasted walnuts. I mean, I know pine nuts are the thing, but who has those bougie little things lying around, especially in the wilderness? After pulsing it all together, I slowly added in a bit of extra virgin olive oil and emulsified the mixture til it tasted most amazing.

The spicy pepperiness that the scapes impart to the pesto makes my whole year. I just love that stuff When I get back from my town run I am making the most ridiculous pizza conceivable, I may be slightly drooling thinking about its composition now.

My first order of business when I get back though, will be to harvest the garlic. I am only going to be gone overnight, but the garlic still needs a couple more days before it is to its harvest point.

Then it's bulb drying time.

After saving the best bulbs for next year's crop, I will be freeze drying and powdering some of the garlic this year too. I gotta get that whole harvest done quickly though, because I am going to be up to my armpits in raspberries and huckleberries next week it looks like.

You can totally tell I am very torn up about that.

But, there is a bunch of things I need to make like syrups and jams with that upcoming harvest, and if I am going to get that all done before I go back to school I better be good with time allocation. Which to be quite honest, is a challenge right now. Today for instance, I had unexpected interns. The building contractor brought his two teenaged sons, and boy were they the greatest kids, we had a blast together, but I will admit, I am totally wiped out from all that.

So, I am now going to lounge, like a lizard, out in the sun for a bit. Recharge my Kat credits so to speak.

Ooh, I love basil pesto. I made some this morning for our scrambled eggs, but with Brazil nuts, and nutritional yeast instead of parmesan. Delicious!

Oh yum, yum, YUM! Pesto eggs!! And I love the idea of making it with nutritional yeast and Brazil nuts! I'm drooling lol!

This year was scape pickles. I still have pesto in the freezer. Blueberry picking is July 20th, just 3 days before the heat pump install. It's going to be a crazy week then...

Oof, July is definitely Julying! Sounds like you are going to need more than a few restorative naps! I've gotta squeeze blueberry picking in there somewhere too!

I haven't ever done scapes in pesto! Not sure if @flemingfarm planted basil this year.

Ooh, I've made garlic scape pesto without basil, but I really love it with basil in it.

I'm never quite sure what to do with the garlic scapes. This year I looked for ideas online. So I dried them in the dehydrator, and then put them in the food processor, and ended up with a powder-like substance that I put into a jar and need to remember to use in a recipe sometime. Pesto remains a mystery to me. I should try to make it sometime.

I've powdered them before! I really like them in eggs and potatoes, I am curious to hear what you do with them!?

I have to harvest the rest of the bulbs tomorrow. I can really tell it's July lol! Hope all is well😊
