I like trying out new recipes on my own 😜. I enjoyed vegan goods because it's purely natural and it's good for the health. While own my own, i do have an idea of what to cook. It might be something i haven't cooked before, but once the vision comes, i prepare the recipe immediately. Last night, i decided to prepare a delicious vegan Abacha (African salad). Already have some carrots and fresh tomatoes, i went to buy dried chopped Abacha made of cassava tuber's. On getting there, i bought it together with green peppers since i have other things at home. And below is the ingredients.
Carrots 2
Fresh tomatoes 2
Green peppers 2
Salt
Water
Palm oil
Ngu (palm ash)
Onions one ball
Ehuru (calabash nutmeg or African nutmeg)
This time, i dont want to add oil bean, vegetables or gadern eggs which was my usual process. But only with carrots and fresh tomatoes.
Steps
Soaking of the dry abacha for 45 minutes for it to get solft. I did that using clean bowls and clean water. I also added salt to it for test. As soon as it gets solft, i seived it out from the water using seive.
While the Abacha was still inside water, i washed the ehuru, fresh tomatoes, fresh pepper 🫑, carrots and onions. I washed twice with clean water, then crush the calabash nutmeg with fresh pepper with mortar and pestle.
Then, chopped or sliced the vegetables together.
Cooking 🍳 🔪*
I put the palm ash in the pot, you know it's in watery form. Added palm oil to it, shake the pot for proper mixing. After that, i put the pot on fire and immediately it started boiling, i added the solft Abacha inside the pot. I used table spoon to mix it. I added salt to it including the pepper and ehuru.
I allowed it to heat for 2 minutes then, i off the fire. I added the sliced vegetables to it. Remember not all. I left some to beautify the food and to be eating raw as well.
After the proper mixture, nothing more. I brought it down. Serverd and enjoyed my meals.
The ehuru gave the food a nice aroma and a good flavor. The carrots 😋 gave the food a natural sweetener. Infact, i overeat due to the carrots taste on the food. The fresh tomatoes on it's own part making the meal more tasty, delicious and healthy for the body.
All the ingredients used is very good for healthy living. The carrots are immune boosters , excellent in food digestion and improves poor vision. Not only that, when we talk of carrot's, we are talking about power house of fiber, minerals and vitamins. So, friends, you can try out something new when preparing your meals. Consume more fruits and vegetables, it's good for our health
