Trying a new recipe|| riped plantain prepared with oil bean and native garden egg leaf's

Welcome 🤗 one's again to my vegan recipe my vegan families. Today, i tried something different. Hahaha, it was a recipe i have never cooked before. But i wanted to try it out today. Guess what! It turned out to be very yummy 😋😋, delicious and a healthy meal due to the ingredients it was made of. Let me share the ingredients with you and my reasons for using them.

  • 9 pieces of ripe plantains

  • Native or local garden egg leaf's

  • Oil bean

  • 1 one full size of onion 🧅

  • Palm or red oil one full big spoon.

  • Fresh tomatoes 🍅 2 seeds

  • Fres ginger

  • Fresh pepper 4 seeds

The plantains was fully ripped. And, i was thinking of how to dilute the sugary taste. Visiting a nearby market, i saw a woman selling this native garden egg leaf's including the oil bean, i decided to use both to try out this new recipe. Reason was because, the garden egg leaf's has some bitter taste in it. While the oil bean has its own natural taste which has no taste of sweet or sugary in it. With this idea, i decided to use them to cook the ripe plantain so that i will be able to eat it. I don't really like sugary foods and i dont want to throw the plantains away since it wasn't spoiled. It's my first time of trying this new recipe. Believe me it was delicious meal 😋.

Step one (1)

I washed the plantains a second time. I already washed them before keeping them in the cupboard. After washing, i peeled off the back of the plantains and put them in a pot.

Step two (2)

While the plantains was in the pot, i selected the garden egg leaf's out from its branches. Washed twice with salt to remove sand and to kill som bacteria's.

After washing, i put them in a sieve for the remaining waters to go out while i moved to the next step.

Step three (3)

Washing of the fresh tomatoes and peppers including the onions and ginger. After washing them, i proceeded with the pounding of the fresh pepper and ginger using the mortar and pestle

Step four (4)

The plantain's, garden egg leaf's, onion and fresh tomatoes where all put together in a tray for slicing.

And here was the results of everything.

Step five (5)

Set the pot on fire and add 2 cups of water. I needed the water to be small because ripe plantains doesn't take time to get done. Put the sliced plantains inside the pot, add the pounded pepper with ginger, add salt and palm oil, cover the pot and allow to boil for 10 minutes.

After 10 minutes, add your oil bean, and cover for another 3 minutes.

Taste the food to be sure the salt was normal and it tastes great. Then proceed with adding of the tomatoes, the chopped onions and leafs.

Off the fire and mixed all properly. It's good and more healthier to enjoy those vegetables raw because the supplies protein, minerals and enzymes to our body.

This is gonna be delicious, been really long I ate garden egg leaf infact it's been years. I think I will also explore a recipe with the leaf.
