Have cassava at home but confused about what to make? try making this one for an afternoon snack, guaranteed you will like it because it tastes really good. The snack that I want to share today uses vegan ingredients with the main ingredient of cassava with a mixture of other ingredients such as flour and brown sugar for sweeteners. Of course this snack is one of the sweet snacks because the ingredients use brown sugar. The way to make this snack is almost the same as making dodol, namely by mixing all the ingredients and then cooking while stirring until cooked and thick / slightly hard. However, there is a slight difference between the two, the cassava cake that I will make this time adds cream to the top layer, one of the goals is to make it look more attractive and luxurious. Okay, rather than being curious, let's just see how to make it below.
Ingredients needed and measurements:
- 1 Cassava
- Coconut milk (size of 1 coconut)
- 50 grams of granulated sugar
- 250 grams of brown sugar
- 1 pandan leaf
- 1/2 tsp salt
- 1/2 coconut for coconut milk (slightly old coconut)
- 1 tbsp Rice flour
- 2 tbsp Tapioca flour
- 50 grams of granulated sugar
- 1/4 tsp salt

The first thing to do is of course peel the cassava, wash it clean and then grate the cassava.
Note: if the cassava used contains a lot of water, squeeze it and discard the water content so that it is not bitter. While cassava that does not contain much water does not need to be squeezed.

Second: comb the brown sugar so that it dissolves easily

Third: prepare the coconut milk then put it in a pan containing brown sugar. Then add all the other ingredients such as granulated sugar, salt, pandan leaves and grated cassava. Stir well until the dough is cooked and thickened. Once cooked, transfer and pour into a container or you can use a small cup and smooth it out. Set aside

Fourth: then make cassava cream. Add coconut milk, flour, tapioca flour, granulated sugar and salt. Stir until everything is well mixed. Then cook using medium heat. Cook while stirring until cooked and thickened. Once cooked, pour the cream over the cassava cake and smooth it out. Wait until it cools down before serving

I am very happy, it tastes delicious, the combination of cassava cake with the sweet taste of brown sugar combined with savory and really melted cream makes the taste of this cake very suitable and also looks more luxurious, right! The texture of both is equally soft. Oh yes, this is my first time making this melted cassava cake and I really didn't expect the cake to be this much, even though I only used 1 cassava. It doesn't matter because the cake is too much so I can share it with my mother-in-law too, because the taste is delicious so it feels good to share it with her. Hopefully she likes it.
