Simple warm pumpkin soup for cold weather.with Norwegian vegan flatbreads.
Hello, friend, vegan lovers, and community Greetings. From yesterday the weather was extremely windy and the temperature is getting low. It is dropping down to around 6 C now. I didn't want to go shopping to buy more vegetables, just made soup from pumpkin which we had from Halloween time.

Peel the pumpkin and cut it into small pieces.
Roughly cut onion and peel garlic cloves.

When oil gets hot add thyme and oregano.
Add onion and garlic.
Saute onion and garlic until translucent.
Add pumpkin.
Add salt pepper and frozen lemon slice.
Add 2 and a half cups of water and cook it until the pumpkin gets softer.
When pumpkin is cooked
Blend it using an immersion blender/mixer.
The soup is ready but the color is dull.
add a pinch of turmeric powder for color.
