I have been so used to fresh tomatoes that, thinking out of the box makes me feel awkward. When i first heard of making stew with carrots, there was this imagination in my head of how it would turn out to be and if it would be edible, all i have known about carrot is eating it raw haven't ever tried cooking it.
So i have heard of it countless times i mean the carrot stew, someone has said to me, if fresh tomatoes is not affordable, just get some carrots, blend it and i will get what i want.
Trying out a carrot Stew with this ingredients
- 600g of carrots
- 60g of Onion
- 200ml of vegetable oil
- 8 pieces of fresh pepper
- 1 teaspoon of salt
Step one
Wash my carrot properly, cut it into small pieces for easy blending. I blended it well and set it aside. Cut my onion and pounded my pepper.
Got all my ingredients ready and set it aside.
Step two
At this stage i put my clean pot on fire and pour in my vegetable oil. Add my onion and pour in my blended carrots until the water dries off.

My onion has been poured.
Added my grinded carrot
Gave it a good mix, fried it until the little water used in grinding it dried up and it produced it's flavor and expected aroma.
At this point in making the stew it is ready, you can add water or not depending on the consistency that you want. It's my choice and adding water is optional.
This carrot stew can be served with; boiled plantain, yam, white rice, potato, anything you wish to.
