African Beans with Potatoes and Plantain

African beans is a local beans well known to Nigerians in the West African part of the world and used to very affordable even to the most down and out person in the society. Cooking this food can be done in different ways, it can be prepared alone on its own, can also be prepared together with rice, yam, preparing it with plantain or potatoes or both together isn't left out.

As an African woman, my people believe that cooking is for the female genders while the male sit and do nothing in the kitchen then but the reason is gradually changing. That was how i come to learn how to cook this meal through my mother. More so, my she's loves it when it prepared just it. As for me i prefer when there's a combination of plantain alone, potatoes alone or both.

Mom called me today and said she wanted to eat and me as well wants to eat ripe plantain and i still have a left over potatoe that is uncooked, making two people's choice of meals in one pot made me happy as this meal can be prepared at any time of the year.

African beans with potatoes and plantains

Ingredients

  • 3 litters of water
  • 200g of Africa beans
  • 100g of onion
  • 400g of potatoes
  • A teaspoon of salt
  • 250g of plantain
  • 10g of seasoning cube
  • 40ml of red oil
  • 10g of cent leaves

Step 1

Am not good in picking beans because it's time consuming, imagine picking more the quantity am about to cook. I poured my beans into the pot, used 50cl of water into it to make sharf float and pour it out then added another 50cl to parboil it for 30 minutes for easy cook. The reason is that the type of beans am making is not everyone's choice because of the amount of time it takes to get done but for me that's the best and have it's natural taste.

I brought it down from the fire and made use of another 50cl water to wash it until the water becomes clear. I put my pot on fire and poured and 50cl of water to boil. Move to the next step. I will be adjusting with water if needed be. It is expected to stay for 45 minutes for this particular beans.

I stepped aside to chop the other ingredients necessary. While the beans boils on fire. I didn't forget to wash the necessary things to be washed. And i did it with 100cl

This people that sell in the market can me cunny, i to the measurement of my cent leaf vegetables before it went to the process of cutting but believe me what i said in between the leaves after loosing it wasn't funny. While i was slicing, i still adjusted with 50cl of water

It's been more than 45 minutes on the fire so i added everything accordingly.


Adding my ingredients accordingly to me 20 minutes, lastly added was the leaves and covered it for few seconds open it and turn it so i could get that taste of the leave. So this dish took me 95 minutes to prepare it.

This is the stage i brought it down. Guess how yummy it tastes, a meal for two and mom isn't home i couldn't wait for her but dish out mine and leave almost same quantity for her in pot
