My vegan porridge beans and plantain

One thing i like about beans is that it can go with different combos. For my friends who can't just our African beans alone i will be telling you the different combos to make you enjoy. Beans can be cooked with; corn have you tasted it? Try it. Pasta, rice, potato, yam, plantain ripped or unripened. As for me i prefer beans and rice or ripped plantain to other combos. Today i made one of my favorites among this combo as my dinner. Follow me to the kitchen while I drop you a step to step recipe.

A delicious porridge beans and plantain

The ingredients that i made use of

  • 460g of Beans
  • 600g of ripped plantain
  • 20g of onion
  • 5 pieces of Scotch bonnet
  • 50ml of palm oil
  • 5g of cent leaves (optional)

Step one
I had to pick my beans, cut the plantain into shapes of choice, pound my scotch bonnet, cut my cent leaves and onion.

Step two
Washed my beans with warm water and put it on fire to cook for some minutes. It cooked for about 40 minutes, i was sure it's done before i added my pepper, plantain, onion and palm oil then.i allowed it to cook for more 20 minutes.

Now i will allow it to Cook, remember don't turning it at this point will give room for it to burn, so please don't turn. Let it cook well and mix with the ingredients. Once it's done then i added the cent leaves to reduce the excess taste.

Step 3
At this stage i added the cent leaves covered the pot and let it be, after three minutes i opened it and stired it well.

I dished out my food, believe me the taste is wonderful and you're gonna like it.
