Hello Vegan lovers, nice to be here again. Hope the week is going on as we planned it. Today I want to share the beans and corn recipe I made.
This recipe is also known as "adalu" in the western part of Nigeria. I have always liked eating beans, I grew up eating a lot of it because it was very nutritious and filling so my parents always made us have them. We had it with cassava flakes or plantain. I loved it back then and still do
Here I prepared the beans and corn porridge and it was just as nice. I used tinned sweet corn to prepare mine to save time. You can use the fresh corn but be sure to cook until soft after cutting them off the cobs before you add them to your beans.
The ingredients used are
3 cups of beans
2 medium sized onion bulbs
1 tin of corn
3 cooking spoon of palm oil
13 scotch bonnet pepper (I like it spicy)
1 table spoon of salt
1 seasoning cube
Preparation
Pick the beans, wash and parboil in a pot
After 15 mins strain the water and rinse with more water. I usually parboil my beans because it causes bloating and gas for me.
Chop some onions and add to the parboiled and washed beans with salt to taste and bring to boil for another 20mins
Wash and crush the peppers
In another pot heat up the oil add some onions and peppers with salt and seasoning cube
Pour the heated oil and pepper sauce to the beans. Let it cook for a couple of minutes and add the cooked corn.
Leave on low heat for one minute and it's ready to eat
You can eat it with plantain or cassava flakes too. Serve and enjoy
