Hello vegan family, hope your week is getting along well. I whipped up a bowl of fresh, crunchy cucumber salad and I'd love to share it with you. This salad has vibrant colours and very delicious because of it's freshness and flavors. It is super easy to make with a few simple ingredients.

Ingredients:

. 3 large cucumbers

. 1 cup cherry tomatoes or 7 medium tomatoes

. 5 big carrots

. 2 medium sized red onion bulbs

. Juice of 1 lemon

. A pinch of Salt and black pepper

. Salad dressing (optional)

Preparation Steps:

. Prep the veggies – Wash all the vegetables thoroughly.

. Cut open the cucumber and remove the seeds then slice thinly

. Scrape and chop the carrots

. Slice the onions thinly

. Chop the tomatoes

. Combine – Toss everything into a large mixing bowl.

. Squeeze fresh lemon juice over the salad. Season with a pinch of salt and black pepper.

. Mix to coat the salt and black pepper evenly

. You may choose to use a salad dressing or have it the way it is

. Chill in the refrigerator or serve immediately
